Why not use Create Fabric Sodium Fix? It works with Sodium 0.5 which has better workarounds for NVIDIA's drivers. TBH I'm actually trying to use Valkyrien Skies mod which has the same problem with Sodium 0.5+. Your solution is the closest one I've found yet even if it's not directly related.
Sodium is a client-sided mod, not a server sided mod. If you are the client connecting, then yes you will have better and smoother gameplay. If you're planning to use it in a server, Lithium + Starlight is the option to look for
