After I reached 1250, I just enjoyed myself, farming Bosses then when there's no Boss around I'll just do anything to keep myself entertained (You can also farm NPCs if you want). But a major factor is that you have a lot of time and dedication because it's easy to get bored in Ro-Ghoul when you have nothing to do. Hope this helps :)
Kaneki is really good for beginners, so changing it isn’t ideal until you can buy a later game kagune. Keep ken and use stage 2 if you afk, stage 3 and 4 aren’t that good ( (imo)). I would go for taki since noro stage 2 requires 1500 levels and stage 2 taki is pretty good.

How I leveled up was simply autoclicking when I was AFK, but you can farm bosses. Here’s what to do: join random server. look for the Nishiki boss. kill him. join another DIFFERENT server. look for Nishiki and kill him. And repeat. When you’ll hit level 750+, go kill Amon boss.
