There is a lot of confusion in how optifine works and what it's settings actually do. Optifine in 1.12 actually has very few incompatibilities. The only hard incompatibility I can evem think of is colored lux mod. You probably just have the bad setting turned on. Things like fast math will break literally every mod.

Potentially any mod because Optifine is a closed source, highly invasive, non-Forge mod which hacks the entire rendering system that almost all mods use, and Optifine could break anything with any update. If you encounter problems, your chain of debugging should be: Remove Optifine to see if it is related.
If you're using Direwolf20, Optifine doesn't work with the 1.9.1 version, but it does work with 1.8.1. Ok, so either use the Optifine version specifically for 1.12.2 or Optifine is just terribly incompatible with whatever mods you have.
Usually this is asked the other way round, you match Optifine to the Minecraft version shouldn't matter what Forge you use as long as its 1.12.2 compatible. I've used several versions of Forge for 1.12.2 up to the recommended and always used Optifine without issue.
