Metro Map Maker is specifically for making fantasy maps. Sure, lots of people make accurate maps, but to me, that's just the start -- the fun comes in remixing and making wildly speculative maps. Some of the maps you listed out actually point to some design limitations I made in early versions of Metro Map Maker.
