Currently, Sobeys is the most expensive of those three, and Metro is generally the least expensive. In my experience (YMMV), Metro generally has the best meat of the three, and Sobeys the best produce. I wouldn't buy meat from Loblaws even if it was the only store in town (except packaged stuff like bacon or cold cuts).
My superstore location is generally cheaper than my sobeys location. ground beef at superstore is leaner than the same grade at Sobeys. If I buy lean at Sobeys, it seems to have the fat content of regular from superstore. -Sobeys carries a few weirdo items that I can't find at my superstore regularly.

Sobeys has more people working and has things like on site deli/butchers and those live herb cabinets. It's a more expensive service model. Higher operating costs means more expensive service or less profit. They're in it for profit so they charge more.
Do you notice Sobeys stores behaving in a very abnormal way. Pork shoulder 2.99. Big 8 pop 99 cents. Italian sausage 3.99. And on and on . The Sobeys near me isn't very dirty and the fruits and veggies are normally somewhat good but you're absolutely spot on for lack of competitive pricing, in stock products, and just about everything else.
